“My mother made mujadara on days when money was tight and it still felt like a feast. I take my time with the onions because the whole dish depends on them.”

Rami's mother ran a catering kitchen in Tripoli. He cooks her mujadara, kibbeh and shish tawook in a commercial kitchen that holds halal certification, and he sells them frozen in trays that go straight into the oven.

The recipe

How Rami makes it. 20 min active, 1 h 15 min cooking, plus cooling.

Ingredients

  • 250 g brown lentils
  • 200 g long-grain rice
  • 1 kg onions (about 5 large), thinly sliced
  • 100 mL olive oil
  • 2 tsp ground cumin
  • 2 tsp salt
  • 1 L water

Method

  1. 1Cook the onions in the olive oil in a wide pan over medium heat, stirring often, for 40 to 50 minutes until deep brown and crisp at the edges. Lift half out onto paper to crisp and reserve.
  2. 2Rinse the lentils and cover with the water in a heavy pot. Boil, then simmer 15 minutes until just starting to soften.
  3. 3Stir in the cumin, salt and the remaining onions with their oil. Add the rinsed rice.
  4. 4Cover tightly and cook on low for 18 to 20 minutes until the rice is tender and the water is absorbed.
  5. 5Rest off the heat, covered, for 10 minutes. Fluff with a fork.
  6. 6Spread in shallow pans no more than 5 cm deep and cool uncovered until under 5 °C within 2 hours. Rice should not sit warm.
  7. 7Pack 800 g per container, with the crisped onions on top. Seal, label and freeze.
