“I started making granola for my own family because the store kind was too sweet. I bake it low and slow so the seeds toast without burning.”

Dana bakes a weekly sourdough and puts up preserves from Ontario fruit and vegetables every season. Everything is made in small batches from recipes she has used for years, and every jar is labelled with the day it was made.

The recipe

How Dana makes it. 15 min active, 40 min baking, plus cooling.

Ingredients

  • 240 g rolled oats (old-fashioned)
  • 80 g whole almonds, roughly chopped
  • 50 g pumpkin seeds
  • 40 g sunflower seeds
  • 105 g (80 mL) maple syrup
  • 50 mL canola oil
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Method

  1. 1Heat the oven to 150 °C. Line a large rimmed baking sheet with parchment.
  2. 2Mix the oats, almonds, pumpkin seeds, sunflower seeds, cinnamon and salt in a large bowl.
  3. 3Whisk the maple syrup and oil together and pour over the dry mix. Stir until every oat is coated.
  4. 4Spread in a thin, even layer on the sheet and press it down lightly.
  5. 5Bake for 20 minutes, then stir and rotate the tray. Bake another 15 to 20 minutes until golden and fragrant.
  6. 6Take it out and leave it on the tray, untouched, until completely cool. It crisps as it cools.
  7. 7Break into clusters and pack 500 g into an airtight jar or bag. Label with the date.

Serving and storing

Keep as the cook advises; most baking also freezes well.

Eat straight from the bag, or over yogurt and fruit, or with milk. If it softens in humid weather, spread it on a tray and bake at 150 °C for 5 minutes, then let cool.

Keeps: Airtight at room temperature: 4 weeks. Freezes well for up to 3 months.
