“In Tianjin we folded dumplings together on the weekend, my aunts counting pleats out loud. I fold thirty-two when I have the time, and I still count out loud.”

Mei folds dumplings the way she learned in Tianjin: thirty-two pleats on a good day. They are frozen flat on trays before bagging so they never stick together, and they cook from frozen in six minutes.

The recipe

How Mei makes it. 1 h 15 min active, plus rest and freezing.

Ingredients

  • 300 g all-purpose wheat flour, plus extra for dusting
  • 150 mL water
  • 300 g ground pork
  • 100 g garlic chives, finely chopped
  • 1 tbsp grated fresh ginger
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/2 tsp ground white pepper
  • 1/2 tsp salt
  • 60 mL cold water, for the filling

Method

  1. 1Mix the flour with the 150 mL water into a dough. Knead 8 minutes until smooth, cover and rest 30 minutes.
  2. 2Stir the pork with the soy sauce, ginger, white pepper and salt in one direction for 2 minutes. Add the 60 mL water a little at a time until the filling feels springy and wet.
  3. 3Fold in the chives and sesame oil just before wrapping, so the chives stay bright.
  4. 4Roll the dough into a rope and cut it into 30 pieces of about 15 g. Roll each into a thin round, thicker at the centre.
  5. 5Put a heaped teaspoon of filling in the middle of each round, fold and pleat to seal, pressing out the air.
  6. 6Place the dumplings on floured trays without touching and freeze flat for 2 hours, until hard.
  7. 7Move the frozen dumplings into a bag, 30 per bag, press out the air, label with the date and return to the freezer.

Heating and storing

Keep frozen until you're ready to cook or reheat it.

Cook from frozen, do not thaw. Drop into a large pot of boiling water, stir gently, and boil 6 to 7 minutes after the water returns to the boil, until they float and a dumpling cut open shows the pork at 74 °C / 165 °F with no pink. Or pan-fry in oil 2 minutes, add 80 mL water, cover and steam 8 minutes. Serve with soy sauce and rice vinegar.

Keeps: Freezer: 3 months, raw-frozen. Cook from frozen. Do not thaw and refreeze. Eat leftovers cooked within 2 days.
